🥗 Refreshing Weekend Salad
Ingredients:
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- 1 avocado, diced
- ½ red onion, thinly sliced
- 1 cup baby spinach or mixed greens
- ¼ cup feta cheese, crumbled (or swap for a plant-based feta alternative)
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp honey or maple syrup
- Salt and pepper to taste
Method:
- In a large bowl, combine tomatoes, cucumber, avocado, onion, and greens.
- In a small jar, whisk together olive oil, lemon juice, honey, salt, and pepper.
