Ok, so 🌮Taco Tuesday🌮 it is. This recipe for black bean and corn tacos uses our delicious fresh blue corn tortillas. Find them in the refrigerator at the back of the store.

Black Bean and Sweet Corn Tacos

• Ingredients: 1 can of black beans, I jar of sweet corn, I pkt tortillas, 1 avocado, 1 jar of salsa.
• Instructions:
1. Heat the black beans and sweet corn in a pan until warmed through. For extra flavour, char the corn before adding the beans.
2. Cook the tortillas in a separate pan.
3. Fill the tortillas with the black bean and corn mixture.
4. Top with sliced avocado and salsa.
5. Serve immediately. Perfect with a squeeze of lime.
