A fun activity with the kids for the school holida A fun activity with the kids for the school holidays - make dinner together! This yummy zoo animal pasta with pumpkin will do the job. Pumpkin Animal Pasta A fun and easy recipe to make with children! Ingredients 250g animal-shaped pasta 1 cup pumpkin, peeled and diced 1/2 cup coconut milk (or any plant-based milk) 1 tbsp olive oil 1 small garlic clove, minced (optional) 1/2 tsp ground nutmeg (optional) 1/4 tsp salt (or to taste) 1/4 tsp black pepper 1/2 cup of grated cheese or 2 tbsp nutritional yeast (for a cheesy flavour) 1/4 cup peas or sweetcorn (optional, for extra veggies) A handful of organic walnuts Instructions Boil the Pasta Cook the animal-shaped pasta according to the packet instructions. Drain and set aside. Cook the Pumpkin In a small saucepan, boil or steam the diced pumpkin until soft (about 10–15 minutes). Drain. Make the Sauce In a blender or a mixing bowl, mash or blend the cooked pumpkin with coconut milk, olive oil, garlic (if using), nutmeg, salt, and pepper until smooth. Combine Everything In a large pan, heat the pumpkin sauce over low heat. Stir in the cheese or nutritional yeast. Add the cooked pasta and mix until coated. If using, stir in peas or sweetcorn and cook for another 2 minutes. If adding some toasted walnuts, remove the nuts from the shells and toast the nuts for a couple of minutes in a dry frypan. Sprinkle the nuts over the dished up pasta. Enjoy! Let the kids enjoy their fun animal pasta with a creamy, delicious pumpkin sauce! Tips for Kids: Let children help stir the pasta and mash the pumpkin. Use fun toppings like chopped fresh basil or a sprinkle of extra cheese or nutritional yeast.
