Looking for something quick and easy for a delicio Looking for something quick and easy for a delicious and good-for-you summer time school holiday treat: Try these refreshing mango coconut ice-creams 🥭🥥 Ingredients: ✔️ 2 ripe mangoes, peeled & chopped ✔️ 1 cup coconut milk (or yoghurt for a creamier texture) ✔️ 1 tbsp honey or maple syrup (optional) ✔️ 1 tsp lime juice (for extra zing!) Originating in southern Mexico and Central America, it has rough, brown skin and bright orange-red flesh surrounding a single, large seed. It can be eaten fresh or used in smoothies, desserts, and sauces. Eat fresh: Enjoy it on its own when ripe. Smoothies and shakes: Blend the flesh into a creamy, delicious drink. Desserts: Use it in ice cream, custards, and other sweet treats. Savoury dishes: It can also be incorporated into curries. How can you tell if it’s ripe? Gently press the fruit. A ripe mamey sapote will give slightly under pressure. Gently scratch the skin on the top of the fruit. If the color underneath is orange or red, it’s ripe.
