🍪 Healthy Vegan & Wheat-Free ANZAC Biscuits

✨ Ingredients
- 1 cup organic rolled oats (Look for ‘wheat free’*)
- 1 cup organic almond meal
- ¾ cup organic shredded coconut
- ⅓ cup organic coconut sugar
- ¼ cup organic maple syrup (or brown rice syrup for a more traditional taste)
- ¼ cup organic coconut oil (melted)
- 2 tbsp water
- ½ tsp bicarbonate of soda
- Pinch of sea salt
- 1 tsp vanilla extract (optional)
👩🍳 Method
- Preheat your oven to 160°C (fan-forced) and line a baking tray.
- In a bowl, combine oats, almond meal, coconut, coconut sugar, and salt.
- In a small saucepan, gently warm the coconut oil and maple syrup until combined.
- Mix the bicarbonate of soda with the water, then stir it into the warm mixture (it will fizz slightly — that’s perfect!).
- Pour the wet ingredients into the dry and mix well.
- Roll tablespoon-sized portions into balls, place on the tray, and gently flatten.
- Bake for 12–15 minutes, or until golden.
- Let them cool on the tray — they’ll firm up as they set.
