Ingredients

  • 1 tbsp olive oil
  • 1 brown onion, diced
  • 2 cloves garlic, crushed
  • 1 tsp ground cumin
  • 1 tsp turmeric
  • 700g pumpkin, peeled and diced
  • 1 cup red lentils, rinsed
  • 1 litre vegetable stock
  • Salt and pepper
  • Greek yoghurt or coconut yoghurt (optional)
  • Fresh parsley to serve

Method

  1. Sauté onion and garlic in olive oil until soft.
  2. Stir through cumin and turmeric for one minute.
  3. Add pumpkin, lentils and stock.
  4. Simmer for 25 minutes until the pumpkin is tender.
  5. Blend until silky smooth.
  6. Season to taste and serve with yoghurt and fresh parsley.

One-Pan Lemon Herb Chicken with Winter Vegetables

Simple, nourishing and perfect for busy weeknights.

Ingredients

  • 4 free-range chicken thighs
  • 2 sweet potatoes, chopped
  • 2 carrots, sliced
  • 1 red onion, cut into wedges
  • 1 zucchini, thickly sliced
  • 2 tbsp olive oil
  • Juice of 1 lemon
  • 2 tsp dried oregano
  • 1 tsp smoked paprika
  • Salt and cracked pepper
  • Fresh rosemary sprigs

Method

  1. Preheat oven to 200°C.
  2. Arrange vegetables in a large roasting tray.
  3. Place chicken on top.
  4. Drizzle with olive oil and lemon juice.
  5. Sprinkle over oregano, paprika, salt and pepper.
  6. Add rosemary and roast for 40–45 minutes until the chicken is golden and cooked through.

Serve with steamed greens or a crisp seasonal salad.
