Ingredients
- 1kg organic pumpkin, peeled and diced
- 1 onion, diced
- 2 cloves organic garlic
- 1 tbsp fresh organic ginger, grated
- 4 cups vegetable stock
- ½ cup coconut cream
- Olive oil
- Salt and pepper
Method
- Sauté the onion, garlic and ginger in olive oil until softened.
- Add the pumpkin and vegetable stock.
- Simmer for 20–25 minutes until the pumpkin is tender.
- Blend until smooth.
- Stir through coconut cream and season to taste.

🥕 2. Hearty Lentil & Vegetable Soup

Ingredients
- 1 cup organic red lentils
- 2 carrots, diced
- 2 celery stalks, diced

- 5 cups vegetable stock
- 1 tsp smoked paprika
- 1 tsp dried thyme
Method
- Cook onion and garlic until soft.
- Add vegetables and spices.

- Simmer for 30 minutes.
- Blend slightly if preferred or leave chunky.

- 1 onion

- 3 cups vegetable stock
Method
- Cook onion and garlic until fragrant.
- Add curry powder and sweet potato.
- Pour in stock and simmer until tender.
- Blend until smooth.
- Stir through coconut milk before serving.
Serve with toasted sourdough or your favourite gluten-free bread.
🥦 4. Broccoli, Kale & White Bean Soup
A nourishing green soup packed with goodness.
Ingredients
- 1 head organic broccoli
- 2 cups organic kale
- 1 can organic cannellini beans
- 1 onion
- 2 cloves garlic
- 4 cups vegetable stock
- Parmesan (optional)
Method
- Sauté onion and garlic.
- Add broccoli and stock.
- Simmer until broccoli is tender.
- Add kale and beans for the final 5 minutes.
- Blend until smooth or leave partly chunky.
- Finish with cracked pepper and grated Parmesan if desired.
The cannellini beans add extra creaminess without needing cream.
