This winter, we’re embracing the slow-cooked comforts of a nourishing organic beef casserole, made with locally sourced K2 Beef and the best of what the season has to offer.

🥘 Hearty Organic Beef Casserole with Winter Veg

This rustic winter casserole is rich in flavour, full of goodness, and beautifully simple. It features K2 Beef’s Higher Eating Certified Organic Diced Beef, known for its superior tenderness, sustainable farming practices, and incredible depth of flavour.

Ingredients:

  • 500g K2 Organic Diced Beef
  • 2 tbsp olive oil
  • 1 large brown onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, chopped into chunks
  • 2 parsnips, peeled and cut into chunks
  • 1/4 small pumpkin, peeled and cubed
  • 1 large potato or sweet potato, cubed
  • 2 cups chopped kale or silverbeet (stalks removed)
  • 1 cup of green beans
  • 2 tbsp tomato paste
  • 1 cup organic beef stock
  • 1 cup water or red wine (optional)
  • 1 tsp thyme (dried or fresh)
  • 1 bay leaf
  • Sea salt & cracked pepper to taste

Instructions:

  1. Preheat oven to 160°C (fan-forced).
  2. In a large oven-safe pot or Dutch oven, heat oil over medium-high heat. Sear beef in batches until browned, then set aside.
  3. In the same pot, sauté onions and garlic until soft. Stir in tomato paste, cooking for 1–2 minutes.
  4. Return the beef to the pot, add carrots, parsnips, potato, and pumpkin. Pour in stock and water (or wine), then add herbs, salt and pepper.
  5. Bring to a gentle simmer, cover with a lid, and transfer to the oven.
  6. Cook for 2.5 to 3 hours until beef is tender and sauce thickened. In the final 15 minutes, stir in chopped leafy greens and beans.
  7. Serve with a side of crusty sourdough or potato or cauliflower mash for the ultimate winter comfort meal.
